I was first introduced to this fantastic book while working in a “Californian” restaurant, near the Eiffel tower in Paris…it was a real revelation and I learnt a hell of a lot about the sort of food I was supposed to be cooking!
Mark Miller was a top chef based in California but his love of Mexican / South-Western food led him to re-locate to New Mexico to develop his style and open “Coyote Cafe”
This really is a great-looking book with beautiful Mexican influenced design, photography and artwork with whole pages given over to colours, patterns or images, really setting the mood for the recipes. I even sent a copy to my father to help inspire his colour scheme for his home in Florida.
Mark gives his personal thougts in introductions to all chapters (salsa, soups, salads, tamales, seafood, meat and COCKTAILS!) and the recipes themselves are all mouthwatering, combining Mexican ingredients and Mark’s many influences from his Californian experience. This book influenced many chefs and restaurants around the world in the nineties.
When this book was first published it was quite hard to get some of the ingredients in Europe, thankfully this situation has improved and I recommend the Cool Chile Company, especially for Mark’s beloved Mexican Chillies.
This book is so good I’ve had to re-buy it twice after lending it to fellow chefs who wouldn’t give it back to me!
